Brusa is a family business that has been producing baked goods since 1974. It was born in the Biella area of Piedmont, Italy. This land and this people are the perfect place to develop Piedmontese pastry and bakery specialties. Brusa's products are the result of local traditions, called Canestrej of Biella.
Brusa wants to promote the long history of Piedmontese traditions through its sweets, selecting a series of products that are processed with great care and attention to high-quality raw materials. From the famous Baci di Dama (Ladies' Kisses) to the typical Biella Torcetti, to the "malga" (mountain hut) butter, to Paste di Meliga, corn shortbread and all the Piedmontese pastries that represent our territory, which are derived from ancient recipes and still retain the traditional processing methods of artisans.
Since 2004, Brusa has been headquartered in Biella, with three laboratories specializing in the production of bread, bread bars, biscuits and chocolate, with a production of more than 2,000 tons of products per year. The factory also has a 250 square meter direct store open to the public from Monday to Sunday, and new concept stores "Caffè Brusa" have opened in Castelletto Ticino (No), Salonno and Verbania.
History and Culture
The recipe for Canestrej Bieleis dates back to biblical times and this rustic waffle called "miasce" seems to have been popular with the Romans as well. In the ancient recipe, white flour is mixed with fioretto (finely sifted corn flour), sugar, soft butter and grated lemon zest. After adding milk, a fairly stiff mixture is obtained, which is cooked between two hot stone plates. Later, steel plates began to be used and noble families began to customize their own Canestrej by engraving their family coat of arms on them.
In the 1805 manuscript "Notice sur l'arrondissement de Biella, leaveement de la Sesia" preserved in the Royal Library of Turin, Canestrej Bieleis is mentioned as a typical product of Biella. Today, Canestrej is part of the traditional agricultural products of Piedmont, protected and promoted by the Piedmont Region.
Process and Type
Brusa retains artisanal methods and produces crispy wafers made with premium chocolate. The recipe for Canestrelli Brusa remains an artisan method, with 70% premium extra dark chocolate sandwiched between two crumbly wafers, flavoured with almond oil and premium cocoa. The chocolate used for the filling is of the highest quality and contains no vegetable fat: only cocoa butter. Antonio Brunero, the court baker, had the idea to stretch the dough into long strips and then bake them until crisp and dry. Not only did the light and easy-to-digest baked bread help Vittorio Amedeo grow, but it was also so popular that it became part of the Savoy dynasty’s dietary habits and quickly spread throughout the region. Not even Napoleon could give up the "petites batons de Turin", and he wanted them delivered every day by express courier from the capital of Piedmont.
Since 1974, Brusa has been upholding the tradition of Piedmontese breadsticks, one of the specialities of its production. Made according to an old traditional regional recipe, the handmade breadsticks are stretched by hand after a slow fermentation process to give them a perfect crispness.
